Chicken Quinoa Power Bowl Recipe

You know that feeling when you don’t want the boring salad that you eat way too much because it is simple and easy? Well, I had that same feeling and decided to put together a packed bowl of all of my favorites. This recipe is filled with veggies, protein, and great for a post workout meal after you killed it at the gym.

What You’ll Need

  • Kale

  • Quinoa

  • Avocado

  • Carrots

  • Cucumbers

  • Radish

  • Cilantro

  • Grilled Chicken

  • Dressing


STEP 1

Rinse quinoa well in mesh strainer; add to a saucepan with water and a dash of salt, heat until you see the water boiling; reduce heat to simmer. Cook about 20 minutes or as instructed on the package. Remove from heat; let it set for about 5 minutes.

STEP 2

Preheat a grill or grill pan to medium-high. In a medium bowl, toss the chicken with the coconut oil and add spices if desired. Grill the chicken until cooked through, 3 to 5 minutes a side. Take the chicken off the grill and move to a cutting board to prep it for your bowl.

STEP 3

After chopping all of the other ingredients, add into a bowl and DIG IN!

Additional ingredients if wanted: Sesame Seeds, Green Onions
